MeMaw's Cookies


MEMAW'S COOKIES



These cookies are from my Mother-in-law.  She was the head of Holland Hall Primary School for 20+ years and this recipe came from there.  She didn't have a name for them so MeMaw's Cookies came pretty natural as this is the only cookie I ever remember her baking.  The kids love them because they have all their favorite flavors.  Chocolate and peanut butter.

Start with:

1/2 Cup Margarine or butter (1 stick)
4 Eggs
1 tsp Vanilla
1 1/2 Cup Sugar
1 1/2 Cup Brown Sugar

Start by creaming the butter and adding the sugars and creaming after each addition.  Add eggs, one at a time, and blend well and add vanilla.  Next...

1 18oz jar of Peanut Butter (I use Jif) or 2 cups.  You can use chunky peanut butter, too.
1 1/2 tsp of baking soda

Blend peanut butter and soda into butter, egg and sugar mixture.  Then add...

3 Cups Oatmeal - I like a mixture of quick oats and old fashioned, but you could use either, or.
1 12oz package Chocolate Chips.  Your favorite and mine is Nestle Semi-Sweet Mini Chips.

Blend just until incorporated.

Optional ingredients are 1 cup nuts or raisins or both.  You will almost never find raisins in my cookies.

Heat oven to 350 degrees.  I use a 00 cookie scoop and it makes about 10 dozen cookies.  I usually use this for 1/2 the dough and use a larger scoop for the other 1/2.  Bake smaller cookies 13 minutes and the larger cookie needs 14 to 15 minutes.  Remove from cookie sheet immediately.  They are hard to remove if you let them cool.  I got 6 dozen small cookies and 3 dozen bigger cookies.
